Abstract: น้ำมันพืชโดยทั่วไป ผ่านกรรมวิธีการผลิตด้วยการสกัดที่ต้องใช้สารเคมี มาใช้ในกระบวนการเพื่อให้ได้ผลผลิตที่มีลักษณะและคุณภาพดี ผลิตได้รวดเร็วมีต้นทุนต่ำ แต่กระบวนการการบีบอัดน้ำมันออกจากเมล็ดพืชโดยตรงเป็นทางเลือกใหม่ ที่จะทำให้ได้น้ำมันพืชที่มีความบริสุทธิ์ ปราศจากสารปนเปื้อนหรือสารตกค้างอื่นๆ และผู้บริโภคสามารถรับประทานได้อย่างปลอดภัย คณะผู้จัดทำโครงการ จึงได้ทำการออกแบบ และสร้างเครื่องบีบอัดน้ำมันจากเมล็ดพืชแบบเกลียวเดี่ยวตลอดจนศึกษาสภาวะการทำงานที่เหมาะสม โดยได้ทำการทดลองบีบอัดวัตถุดินจำนวน 5 ชนิด คือ เมล็ดทานตะวัน เมล็ดงาขาว เมล็ดถั่วลิสง เมล็ดฟักทอง และเนื้อมะพร้าว ขูดตากแห้ง โดยน้ำวัตถุดิบไปบีบอัดที่ความเร็วรอบของเกลียวแตกต่างกัน พร้อมกับ เลือกขนาด ช่องคายกากที่เหมาะสมไปพร้อมๆ กันด้วย ใช้มอเตอร์ไฟฟ้าเฟสเดียวขนาด 2 แรงม้า ทดรอบด้วยเฟืองขนาดอัตราทด 1:7 เป็นตัวส่งกำลังขับชุดเกลียวบีบอัด และสามารถปรับค่าความเร็วรอบของมอเตอร์ด้วยอินเวอร์เตอร์ จากการศึกษาได้ใช้ความเร็วรอบของเกลียวบีบอัด 5 ระดับ และกำหนดขนาดของช่องคายกากเป็น 4 ขนาด พบว่าเมล็ดทานตะวันกะเทาเปลือกที่ความเร็ว 15 รอบต่อนาทีช่องคายกากขนาด 8 มิลลิเมตร เมล็ดงาขาวที่ความเร็วรอบ 15 รอบต่อนาที ช่องคายกากขนาด 10 มิลลิเมตร เมล็ดถั่วลิสงที่ความเร็วรอบ 15 รอบต่อนาที ช่องคายกากขนาด 10 มิลลิเมตร เมล็ดฟักทอง ที่ความเร็ว 15 รอบต่อนาที ช่องคายกากขนาด 8 มิลลิเมตร และเนื้อมะพร้าวขูดตากแห้งที่ความเร็ว 15 รอบต่อนาที ช่องคายกาก 14 มิลลิเมตร ได้ปริมาณน้ำมันมากที่สุด คือ 53 41 28 40 และ 60 เปอร์เซ็นต์ และได้อัตราการผลิต 2.10 1.70 0.75 2.20 และ 5.52 กิโลกรัมต่อชั่วโมงตามลำดับ ทั้งนี้ ได้ควบคุมอุณหภูมิของน้ำมันขณะบีบอัดต้องไม่ควรเกิน 60 องศาเซลเซียส เพื่อเป็นการควบคุมคุณภาพของน้ำมันให้มี สี กลิ่น รส และคุณสมบัติด้านโภชนาการอยู่ครบถ้วนตามธรรมชาติ
The chemically extracting process is normally used to produce vegetable oils. This is due to the process is highly productive and relatively low cost. However. the vegetable oil produces in this process may contain unwanted chemicals that used during the extracting process. Alternatively. the oil pressing process is newly introduced to overcome those problems. This project aims to design and manufacture a single screw oil press machine and to study factors and conditions that suit the oil pressing process. This machine is driven by a single phase (220V) 2 horsepower electrical motor. This motor drives a single screw to press dehulled vegetable seeds such as sunflower seeds. sesame seeds. ground nuts. Pumpkin seeds and scraped coconut. This project also studied two production factors i.e. screw speeds and die sizes. Experiments were carried out by using five different screw speeds and four different die sizes. The experimental results showed that the best production conditions for: sunflower seeds and pumpkin seeds were 15 rpm of the screw speed and 8 mm of the die size: sesame seeds and ground nuts were 15 rpm of the screw speed and 10 mm of the die size: and scraped coco nut was 15 rpm of the screw speed and 8 mm of the die size. The percentages of oil produced in this process were 53. 4 1. 28. 40 and 60. the production rate were 2.60. 1.70, 1.75 and 5.52 kg/h our for sunflower seeds, sesame seeds. ground nuts, pumpkin seeds and scraped coconuts respectively. During this experiment, the temperature was kept below 60 degree Celsius to maintain the quality of the vegetable oils.
